Alfredo Sauce

Alfredo Sauce

1/2 cups freshly grated pecorino romano cheese

1 cup parmigianino cheese freshly grated

1/2 cup asiago

1 tbsp flour

1/2 cup butter

1 1/2 cups heavy whipping cream

4 cloves garlic minced

1/2 tsp of freshly grated whole nutmeg

salt and pepper to taste

Directions:

Ingredients: 

Melt butter in a medium saucepan over medium heat add the garlic and sauté for a minute or so.

Next add flour and stir until all the flour starts to absorb the butter. You want to cook the flour and this will help thicken the sauce.

Add cream and bring to a simmer. Cook, whisking often, for 5 minutes.

Add cheese slowly (I recommend doing it in two batches) and whisk until melted.

Add salt and pepper, to taste.


Right before serving grate nutmeg into the finished sauce.
