

Potatoes & Eggs

5 potatoes cut in half and then in half again and slice making triangles
3 tbsp vegetable oil
1 medium onion chopped
8 eggs
2 tbsp butter
1 tbsp season salt
1 tbsp black pepper
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder

Ingredients:
In a large pot add potatoes, fill with water, salt and
boil on medium heat.
Cook the potatoes for about 5 to 8 minutes or until
almost tender. Do not cook until fully soft!
Strain them and set them aside.
Next in a large skillet, add your oil and your onions.
Cook the onion on medium heat until it golden brown. Then add the potatoes and all the spices.
Cook the potatoes till they start to get a nice golden brown and flip over with a spatula making sure to scrape up as much of the onions and oil to coat the potatoes. When the potatoes are getting crisp, start to push them over to one side of the skillet, make some room for the eggs.
In a large bowl scramble the eggs and season with salt and pepper.
Add the butter to the skillet where you left room, and let it melt a bit then add the eggs. You will have to use the spatula a bit until they start to cook and it’s okay if they mix up with the potatoes since they will be mixed with them after they are more firm. Once the eggs are more cooked, and not so soupy, start to mix the potatoes and the eggs together.
BE CAREFUL, you don’t want to mash the cooked potatoes.
Once the potatoes and eggs are combined, plate them with some toast. Enjoy!
