Spicy Pepper Bites

Spicy Pepper Bites

1 bag mini tri color peppers

3 cups italian seasoned breadcrumbs

1 cup shredded italian blend cheese

1 cup freshly grated pecorino romano cheese

2 eggs

1/2 cup extra virgin olive oil

1/2 - 1 tsp red pepper

1/2 bunch fresh parsley chopped finely


Directions:

Ingredients: 

Preheat oven 375 degrees


In a large bowl, with the exception of the oil, add all ingredients and mix.

Slowly begin adding oil to the mix. It should be the consistency of wet sand.


Get each pepper and remove tops. Carefully remove any membranes and seeds without breaking the peppers


Once the mixture is sand like in texture, you may begin stuffing your peppers.

Fill them only 3/4 of the way, as they will grow as they cook.


On a greased sheet pan, placed stuffed peppers. You may drizzle a little oil over each pepper if you wish.

Bake for 30 to 40 minutes or until a little roasted on the tops.


Take out of the oven and let cool a little bit. Enjoy!
