

Spinach Ring

2 pkgs frozen chopped spinach thawed & drained and all liquid squeezed out thoroughly
3 small cans mushrooms (drained)
2 small canned sliced black olives (drained)
6 slices deli Ham
1 pkg pizza dough
2 tbsp season salt
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese
¼ cup freshly grated romano cheese
1 Egg yoke
½ cup frozen chopped onion (cooked and drained)
½ cup frozen chopped green peppers (cooked and drained)
2 tbsp extra virgin olive oil

Preheat oven 375 degrees
In a large bowl, mix spinach, mushrooms, green peppers, onions, black olives, mozzarella, cheddar and romano cheese.
On a large cookie sheet put the pizza dough and drizzle a little oil over the top. Spread the pizza dough out from the edges adding more oil and flipping over until it fit’s the majority of the cookie sheet. (it should resemble how a pizza would be)
Once it’s stretched up to fill the cookie sheet, start layering your sliced ham in a straight line across the dough.
Next get a handful of the spinach mixture and start placing it on the line of ham slices. Do not be afraid of mounding the mixture as the dough WILL stretch over it all.
When you have put all the mixture on top, gently get one side of the dough and pull it over the mixture.
Then get the other side of the dough and pull it over the side of dough you just flipped. Almost like a giant tootsie roll.
Now, very careful you want to flip the entire roll over seam side down. You want to gently make the roll curve around and touch the other side. Making sure to be careful as you don’t want the dough to tear. Be sure to seal the ends together so nothing leaks out. (if you are afraid to make a ring, there is no reason why you can’t just leave it seam side down in a straight log… I do most of the time as I hate it when I mess up the ring!)
Once your roll looks more like a ring, (or a log ;) get an egg and separate the yoke. With a pastry brush, brush the yoke over the top of the ring.
Next get the season salt and generously sprinkle it over the top of the dough.
Next, get a sharp knife and make 5 or 6 score the top of the ring.
Stick in the oven and bake for 45 minutes or until top is golden brown and cheese bubbles through the scores on top.
Tap the top with the back of a spoon. If it’s nice and hard sounding, it’s probably done.
Let is set a bit before slices so that it’s not so hard to plate. Enjoy!!
