

Sweet Potato Casserole

6 cups mashed sweet potatoes (5-6 potatoes) cooked and peeled
3/4 cup dark brown sugar
1/2 cup heavy whipping cream
1/4 cup melted butter
1/4 tsp cinnamon
1/4 tsp salt
2 cups mini marshmallows
Oatmeal Streusel
1/4 cup rolled oats slightly crushed
2 tbsp dark brown sugar
1 tbsp flour
1/8 tsp cinnamon
2 tbsp cold diced butter

Preheat oven to 350 degrees
In a large bowl add cooked/peeled sweet potatoes and blend with hand mixer until smooth. Then measure exactly 6 cups of the blended sweet potatoes into another large bowl.
Add brown sugar, cinnamon, salt, and mix. Then pour into an 8x8 baking dish.
In a medium size bowl add oats, flour, brown sugar, cinnamon, and cold butter. Mix until crumbly and then cover the top of the sweet potatoes.
Put in oven and bake until top is beginning to brown. Next put on the marshmallows and the heat will melt them.
