Veggie Wrap

1/2 cup broccoli sprouts

6 red leaf lettuce leaves

6 baby spinach leaves

2 roasted red peppers lightly patted dry with paper towel

1 1/2 tbsp diced red onions

5 thin slices of an english cucumber

1 tbsp sliced black olives

1 1/2 tbsp diced dill pickles

2 tbsp diced tomatoes

2 1/2 slices pepper jack cheese

2 slices smoked deli turkey

2 tbsp mayonnaise

1-2 tbsp italian dressing

1 sundried tomato tortilla wrap

Directions:

Ingredients: 

On a flat surface, lay down your tortilla wrap.

1st add the mayonnaise, then the turkey and cheese

Then add the sliced cucumbers, and then the roasted red peppers


In a large bowl, add your lettuce and spinach Add 1 tbsp of the italian dressing and mix. If it needs more add more, however if it's really soupy, then add more lettuce.


Next place the now seasoned lettuce and spinach on top of the red peppers. Spread the broccoli sprouts next.

Then, add the tomatoes, pickles, onions and olives.

Now, carefully, fold in the sides of the wrap as best as you can. Don't pull too hard or it will tear.

You're going to roll this up like a burrito. Roll it away from you, tucking in the filling as you go.


NOTE:

Yes, it will look VERY full, and yes it will be VERY hard to wrap up. This takes practice, so give yourself a break and do your best. It's going to be messy and frustrating but, eventually you'll get the hang of rolling it up. Sometimes I use 2 tortillas so, you could always try that if that's easier.


Once it's rolled up, keep it seem side down, and cut it at an angle.

You can have this with chips or whatever. Enjoy!
